Need advice.

Legitimately what should I do next with these there about 3 and a half feet tall but I don't know what to do. They can go another 2 and a half before they hit the ceiling which I predict they will by the end of the summer. Cut? Process? Interested? I will have to find the exact species but they are a type of Bolivian I believe.
